LA GRANDE PIÈCE

100% dry chenin on sandstone and pudding

La Grande Pièce is a bright, smooth and mineral cuvée, of great complexity.

Hand harvested.

Slow cold pressing.

Fermentation with natural yeast.

Plot located on the western slope of the Butte de Chaume.

Vinified and aged for 14 to 15 months, 12 of which in barrels.

Free malolactic fermentation. Full or partial depending on the vintage.

Food and wine pairing: With scrambled eggs and porcini mushrooms, a Thai curry of butternut squash, gnocchi with 18 months old Comté.

 

Serving temperature: between 10 and 12 °

Aging potential: built for aging
